Co v&aacute;s k n\u011bmu p\u0159ivedlo?<\/strong><br \/>Z&aacute;jem o pe\u010den&iacute;? Asi hned vedle z&aacute;jmu o va\u0159en&iacute; pro rodinu.&nbsp;Ale zat&iacute;mco u va\u0159en&iacute; pomohla radou maminka nebo kamar&aacute;dky, v pe\u010den&iacute; jsem si troufala jen na sladk&eacute; s pr&aacute;&scaron;kem do pe\u010diva, a kynut&eacute; opravdu jen okrajov\u011b &#8211; nerozum\u011bla jsem si s n&iacute;m, a tak jsem k n\u011bmu m\u011bla a\u017e nep\u0159irozen&yacute; respekt.<\/p>\n<p>P\u0159esto jsem ob\u010das n\u011bjakou zku&scaron;enost pochytila, a kdy\u017e jsem zjistila, kolik pe\u010den&iacute;m chleba i drobn&eacute;ho pe\u010diva u&scaron;et\u0159&iacute;m a jak dok&aacute;\u017ee b&yacute;t chutn&eacute; (kupovan&eacute; vy&scaron;lo mnohon&aacute;sobn\u011b dr&aacute;\u017e a nebylo tak dobr&eacute;, jako dom&aacute;c&iacute;), za\u010dalo m\u011b pe\u010den&iacute; kynut&eacute;ho pe\u010diva opravdu bavit. Moje pokusy byly rodinou na&scaron;t\u011bst&iacute; radostn\u011b p\u0159ij&iacute;m&aacute;ny, tak m\u011b ve zkou&scaron;en&iacute; nov&eacute;ho nic nebrzdilo a postupn\u011b jsem se p\u0159es vymazlen&eacute; recepty s dro\u017ed&iacute;m propracovala a\u017e ke kvasov&eacute;mu pe\u010divu.<\/p>\n<p><strong>Pe\u010dete rad\u011bji sladk&eacute; nebo slan&eacute;?<\/strong><br \/>Nem&aacute;m to n\u011bjak p\u0159&iacute;sn\u011b vyhran\u011bno, ale snad t&iacute;m, \u017ee sladk&eacute; pe\u010divo b&yacute;v&aacute; na stole m&eacute;n\u011b \u010dasto, jako n\u011bjak&aacute; p\u0159&iacute;jemn&aacute; &#8222;te\u010dka&#8220; za slavnostn\u011bj&scaron;&iacute;m ob\u011bdem nebo p\u0159i poho&scaron;t\u011bn&iacute; n&aacute;v&scaron;t\u011bvy, pe\u010du v&iacute;ce, a t&iacute;m mo\u017en&aacute; i rad\u011bji, pe\u010divo slan&eacute;. Je nutno dodat, \u017ee i ta sladk&aacute; te\u010dka je na stole t\u0159eba.<\/p>\n<p><strong>D&aacute;v&aacute;te p\u0159i pe\u010den&iacute; p\u0159ednost troub\u011b nebo pek&aacute;rn\u011b?<\/strong><br \/>Ur\u010dit\u011b troub\u011b. V t&yacute;dnu, kdy nen&iacute; \u010das na jin&eacute;, pe\u010deme chleba v dom&aacute;c&iacute; pek&aacute;rn\u011b a jak jsem zm&iacute;nila v knize, pek&aacute;rnu bych z kuchyn\u011b nedala. Kdy\u017e nen&iacute; robot, uhn\u011bte ochotn\u011b a dob\u0159e t\u011bsto i dom&aacute;c&iacute; pek&aacute;rna. A chleba z n&iacute; (i kv&aacute;skov&yacute;!), by\u0165 nem&aacute; k\u016frku hn\u011bd&eacute;ho bochn&iacute;ku z trouby, je v\u011bt&scaron;inou lep&scaron;&iacute; ne\u017e chleba kupovan&yacute;.&nbsp;Drobn&eacute; pe\u010divo v pek&aacute;rn\u011b ale neupe\u010dete. A tak&eacute; chleba z trouby, s pevnou, k\u0159upavou, p\u0159&iacute;jemn\u011b naho\u0159klou k\u016frkou, je nenahraditeln&yacute; a nenapodobiteln&yacute; (mo\u017en&aacute; jen v dobr&eacute; remosce, ale tam je zas omezen&yacute; mali\u010dk&yacute;m pe\u010d&iacute;c&iacute;m prostorem).<\/p>\n<p><strong>Kdy se zrodil n&aacute;pad na va&scaron;i v\u016fbec prvn&iacute; knihu?<\/strong><br \/>Asi u\u017e v &#8222;prav\u011bku&#8220; m&eacute;ho pe\u010den&iacute;, i kdy\u017e tehdy to nebyl n&aacute;pad na knihu, ale jen starost a l&iacute;tost, \u017ee nem&aacute;m sv&eacute; z&iacute;skan&eacute; zku&scaron;enosti komu p\u0159edat &#8211; na&scaron;eho jedin&eacute;ho syna z&aacute;liba v dom&aacute;c&iacute;m pe\u010den&iacute; obe&scaron;la velk&yacute;m obloukem.<\/p>\n<p>Potk&aacute;vala jsem za\u010d&iacute;naj&iacute;c&iacute; peka\u0159ky se stejn&yacute;mi ot&aacute;zkami a probl&eacute;my, kter&eacute; v peka\u0159sk&yacute;ch za\u010d&aacute;tc&iacute;ch tr&aacute;pily i m\u011b, a tehdy mi nem\u011bl kdo poradit. Proto jsem byla r&aacute;da, \u017ee zku&scaron;enosti v pe\u010den&iacute; i recepty mohu sepisovat alespo\u0148 na sv&yacute;ch str&aacute;nk&aacute;ch, kter&eacute; jsem pojmenovala Pek&aacute;rnom&aacute;nie. <\/p>\n<p>Prvn&iacute; knihou, kter&aacute; mi vy&scaron;la v r. 2011, byla <a href=\"https:\/\/www.knihcentrum.cz\/pekarnomanie\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #1b3f75;\"><strong>Pek&aacute;rnom&aacute;nie<\/strong><\/span><\/a> (kompletn&iacute; pr\u016fvodce pe\u010den&iacute;m nejen v dom&aacute;c&iacute; pek&aacute;rn\u011b). Tehdy jsem nab&iacute;dla svoje recepty a zku&scaron;enosti s dom&aacute;c&iacute; pek&aacute;rnou do nakladatelstv&iacute; Dona, kde se n&aacute;pad zal&iacute;bil. S Radkou Hrevu&scaron;ovou jsme daly dohromady knihu, kterou \u010dten&aacute;\u0159i velmi kladn\u011b p\u0159ijali a j&aacute; jsem jim za to vd\u011b\u010dn&aacute;.<\/p>\n<div style=\"text-align: left;\"><strong>Poj\u010fme te\u010f k novince <a title=\"Ruce v mouce\" href=\"https:\/\/www.knihcentrum.cz\/ruce-v-mouce\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #1b3f75;\">Ruce v mouce<\/span><\/a>. Jak dlouho jste na n&iacute; pracovala a co v&scaron;echno v n&iacute; \u010dten&aacute;\u0159i najdou?<\/strong><\/div>\n<p>Pr&aacute;ce p\u0159&iacute;mo na rukopisu trvala asi rok a p\u016fl. Kniha ale obsahuje recepty, kter&eacute; jsem vymyslela, n\u011bkolikr&aacute;t vyzkou&scaron;ela a sepsala v pr\u016fb\u011bhu posledn&iacute;ch 5-6 let. Tak\u017ee se d&aacute; \u0159&iacute;ct, \u017ee v souhrnu pr&aacute;ce na knize trvala mnohem d&eacute;le.<\/p>\n<p>Pe\u010den&iacute; chleba nebo drobn&eacute;ho pe\u010diva doma je dnes velk&yacute; hit. Ne v&scaron;ichni si troufaj&iacute; na kv&aacute;skov&eacute; (spr&aacute;vn\u011b peka\u0159sky &#8211; kvasov&eacute;) pe\u010den&iacute; s \u017eitn&yacute;m kv&aacute;skem, i kdy\u017e po n\u011bm t\u0159eba tou\u017eebn\u011b pokukuj&iacute;. Proto jsem za\u0159adila jak <strong>recepty s dro\u017ed&iacute;m, tak i recepty kv&aacute;skov&eacute;<\/strong>.<\/p>\n<p>V knize najdete postup v&yacute;roby \u017eitn&eacute;ho kv&aacute;sku, rady, jak ho udr\u017eet v kondici, uchovat v dob\u011b va&scaron;&iacute; del&scaron;&iacute; nep\u0159&iacute;tomnosti doma, podrobn\u011b popsanou p\u0159&iacute;pravu kvasov&eacute;ho pe\u010diva a spoustu r\u016fzn&yacute;ch &#8222;drobe\u010dk\u016f&#8220; (vychyt&aacute;vek) od v&aacute;lu i trouby. Nesm&iacute;m zapomenout na kapitolu, kter&aacute; porad&iacute;, jak si obl&iacute;ben&yacute; recept s dro\u017ed&iacute;m p\u0159ev&eacute;st na kv&aacute;skov&yacute; (a naopak), tak\u017ee vlastn\u011b \u010dten&aacute;\u0159i mohou v&scaron;echny recepty v knize up&eacute;ct jen v kv&aacute;skov&eacute; verzi (pop\u0159. jen jako pe\u010divo s dro\u017ed&iacute;m).<\/p>\n<p>Co se t&yacute;k&aacute; posledn\u011b jmenovan&eacute;ho &#8211; pe\u010diva s dro\u017ed&iacute;m &#8211; nab&iacute;z&iacute;m \u010dten&aacute;\u0159\u016fm k vyzkou&scaron;en&iacute; jak klasicky zpracovan&eacute; recepty, tak i recepty, kde je t\u011bsto zad\u011bl&aacute;no s prefermentem, kter&yacute; p\u0159edkvas&iacute; \u010d&aacute;st recepturn&iacute; mouky a pe\u010divo pak chutn&aacute; jinak, l&eacute;pe. P\u0159es ten trochu tajemn&yacute; n&aacute;zev, &#8222;preferment&#8220;, jsou to recepty opravdu jednoduch&eacute; a ten, kdo je vyzkou&scaron;&iacute;, bude ur\u010dit\u011b p\u0159ekvapen v&yacute;slednou chut&iacute; pe\u010diva &#8211; je l&eacute;pe nakynut&eacute;, chutn\u011bj&scaron;&iacute; i trvanliv\u011bj&scaron;&iacute;.<\/p>\n<p>Nem\u011bla bych zapomenout na kapitolu se zahrani\u010dn&iacute;mi recepty, od ben&aacute;tsk&yacute;ch kobl&iacute;\u017ek\u016f, p\u0159es trdeln&iacute;ky, lango&scaron;e, fougasse, pizzy a dal&scaron;&iacute; italsk&eacute; pe\u010divo. Posledn&iacute; kapitolu pak tvo\u0159&iacute; n\u011bkolik recept\u016f na dobroty, kter&eacute; k pe\u010divu zakousneme nebo si na n\u011bj m\u016f\u017eeme namazat (Camping sal&aacute;t, pomaz&aacute;nka do pln\u011bn&yacute;ch baget, dom&aacute;c&iacute; pa&scaron;tika, &scaron;unka aj.).<\/p>\n<p><strong>Kdo je autorem fotografi&iacute;, kter&eacute; tuto knihu dopl\u0148uj&iacute;?<\/strong><br \/>V&scaron;echno pe\u010divo v knize je nov\u011b nape\u010den&eacute; pro fotografov&aacute;n&iacute; &#8211; pekli jsme doma s man\u017eelem a n\u011bco m&aacute;lo se snachou i s tch&yacute;n&iacute;. Fotografovala jsem pak za man\u017eelovy vydatn&eacute; pomoci &#8211; p\u0159in&eacute;st, naaran\u017eovat a zase uklidit v&scaron;echny dopl\u0148ky zabere docela dost \u010dasu, tak jsem mu za jeho pomoc opravdu moc vd\u011b\u010dn&aacute;.<\/p>\n<p><strong>Kdy\u017e jste takov&aacute; peka\u0159ka, znamen&aacute; to, \u017ee nikdy \u017e&aacute;dn&eacute; pe\u010divo nekupujete?<\/strong><br \/>R&aacute;da bych, ale u n&aacute;s doma to nen&iacute; mo\u017en&eacute;. Ne v\u017edy je \u010das nebo s&iacute;la up&eacute;ct. Pokud v&scaron;ak pe\u010divo kupuji, dost si vyb&iacute;r&aacute;m a zn&aacute;m-li sortiment, jdu na jistotu. O to v&iacute;c si pak doma o v&iacute;kendu to na&scaron;e dom&aacute;c&iacute;, vymazlen&eacute;, s l&aacute;skou p\u0159ipraven&eacute; pe\u010divo vychutn&aacute;me.<\/p>\n<p><strong>A co t\u0159eba dovolen&aacute;. Jak v&aacute;m chutn&aacute; pe\u010divo v zahrani\u010d&iacute;?<\/strong><br \/>V zahrani\u010d&iacute; jsem na chu\u0165 i tvarov&aacute;n&iacute; m&iacute;stn&iacute;ho pe\u010diva samoz\u0159ejm\u011b zv\u011bdav&aacute; a moc r&aacute;da ho ochutn&aacute;m, ale stejn\u011b r&aacute;da se vrac&iacute;m dom\u016f s p\u0159edstavou \u010dekaj&iacute;c&iacute;ho kraj&iacute;ce \u010derstv&eacute;ho chleba s pru\u017enou st\u0159&iacute;dou a k\u0159upavou k\u016frkou. \u010cesk&yacute; chleba je \u010desk&yacute; chleba. Z&aacute;klad na&scaron;eho j&iacute;deln&iacute;\u010dku, s nezam\u011bnitelnou chut&iacute; i v\u016fn&iacute;.<\/p>\n<p><strong><img decoding=\"async\" style=\"max-width: 259px; float: right; margin-right: 15px; margin-left: 15px;\" src=\"\/content\/images\/uploaded\/chlebik.png\" width=\"100%\" height=\"auto\" alt=\"\" title=\"\">M&aacute;te n\u011bjak&yacute; recept, kter&yacute; je ve va&scaron;&iacute; rodin\u011b nejobl&iacute;ben\u011bj&scaron;&iacute;?<\/strong><br \/>Snad v&aacute;s nezklamu, kdy\u017e \u0159eknu, \u017ee je to ten nejjoby\u010dejn\u011bj&scaron;&iacute; kvasov&yacute; (kv&aacute;skov&yacute;) chleba, u n&aacute;s nazvan&yacute; Denn&iacute;. Kvasov&eacute; pe\u010divo del&scaron;&iacute; fermentac&iacute; (kva&scaron;en&iacute;m) von&iacute; i chutn&aacute; zcela jinak ne\u017e to s dro\u017ed&iacute;m a kupovan&eacute; chleby t\u011bm opravdu kvasov&yacute;m nesahaj&iacute; ani po pomysln&eacute; kotn&iacute;ky.&nbsp;Kvasov&yacute; chl&eacute;b von&iacute; i v &uacute;stech, m&aacute; zcela jinou, pln\u011bj&scaron;&iacute; chu\u0165 a p\u0159i dobr&eacute;m skladov&aacute;n&iacute; vydr\u017e&iacute; i t&yacute;den. Do nov&eacute; knihy bude pot\u0159eba m&iacute;t dostatek nov&yacute;ch, vyzkou&scaron;en&yacute;ch recept\u016f a tak&eacute; n&aacute;pad, p\u0159edstavu linie, kter&eacute; se budu dr\u017eet. Kniha, kter&aacute; by od t\u011bch prvn&iacute;ch jakkoliv &#8222;opisovala&#8220;, by pro \u010dten&aacute;\u0159e &#8211; peka\u0159e nebyla p\u0159&iacute;li&scaron; zaj&iacute;mav&aacute;. Cokoliv &#8222;&scaron;it&eacute;ho horkou jehlou&#8220; se na v&yacute;sledku velice podep&iacute;&scaron;e.&nbsp;V&scaron;echno m&aacute; sv\u016fj \u010das. S dom&aacute;c&iacute;m pe\u010divem za\u010dala kdysi d&aacute;vno kv\u016fli &uacute;spo\u0159e, pozd\u011bji se nutnost p\u0159etavila v z&aacute;libu a celo\u017eivotn&iacute; kon&iacute;\u010dek, na kter&yacute; ned&aacute; dopustit. Vyzkou&scaron;en&eacute; i vlastn&iacute; recepty, post\u0159ehy a postupy vkl&aacute;d&aacute; na sv&eacute; str&aacute;nky Pek&aacute;rnom&aacute;nie, podle kter&yacute;ch byla pojmenovan&aacute; jej&iacute; prvn&iacute; kniha &#8211; Pek&aacute;rnom&aacute;nie (kompletn&iacute; pr\u016fvodce pe\u010den&iacute;m nejen v dom&aacute;c&iacute; pek&aacute;rn\u011b), kterou napsala spolu s R.Hrevu&scaron;ovou v r. 2011.&nbsp;<\/p>\n<p>Proto\u017ee se I. Trho\u0148ov&aacute; st&aacute;le zaj&iacute;m&aacute; o nov&eacute; postupy v pe\u010den&iacute;, zkou&scaron;&iacute; nov&eacute; kombinace surovin a tak vznikaj&iacute; nov&eacute; recepty, mohla vydat dal&scaron;&iacute; knihu, Ruce v mouce, ve kter&eacute; obs&aacute;hla pe\u010den&iacute; nejen s dro\u017ed&iacute;m, ale i \u017eitn&yacute;m kvasem.
